As I mentioned last week Saturday kitchen is on summer hols at the moment so no wine matches are available this week. Instead I thought I’d add my own so here we go.
Last night I prepared some pan fried salmon fillets on a bed of roasted summer vegetables as follows.
First I sliced up some red onion, courgette, potato, tomato and fennel. I lined them all up in layers in a baking tray and dusted with some dried oregano, salt and lots of black pepper. I then drizzled the lot with some extra virgin olive oil and put them in a pre- heated oven (180c) for about half an hour. If you try this just keep an eye on them and if they are starting to burn cover the dish with tin foil.
When the veg are nearly done pan fry the seasoned salmon cuts skin side down in a little oil. Let them cook almost all the way through on the skin side then flip them over and seal all round adding a little butter as you do so. Pop the pan in the oven for a few minutes to finish (as long as you are using an oven proof pan!) and serve up on top of the vegetables.
