Another generous helping of expertly crafted dishes and perfectly matched wines this weekend.  Cooking live were guest chefs Shaun Rankin and Bryn Williams with special guest William Gaminara facing food heaven: Coconuts or hell: Squid.  Matching up the wines this week was Peter Richards, this week scouring Portsmouth for those all- important matches

First up Jersey Chef Shaun prepared Sea bass poached in confit lemon butter with asparagus and oysters a seasonal medley which needed a great wine partner. Peter checked out a Sauvignon blanc from Slovenia initially but then moved over to Chile for the fantastic Errazuriz Reserva Sauvignon Blanc 2011 which has the perfect notes to work well with the asparagus and lemon in Shaun’s dish.

Bryn’s dish this time was Roast loin of lamb, peas, lettuce and bacon and wild garlic pesto Peter suggested a cabernet sauvignon to match and looked at a Margaux as a pricey possible.

For a more modest budget however he found an Australian cab sav – The Coonawarra 2010 that fit the bill in terms of gutsy rich flavours to stand up to the wild garlic and lamb in Bryn’s dish.

William was unlucky with the vote and was served squid in the form of: Salt and pepper breaded squid with chilli dip and coriander salad Peter chose a Steillage Riesling to go with this one.
