Fortified wine is generally associated with warmer climes such as Portugal, Spain, Sicily and the Madiera islands. A spirit, usually brandy is added to wine to produce a more intense flavour. The original reason creating fortified wine sherry and port was to preserve wine with the natural antiseptic properties of alcohol. Over time and with experimentation however it became a much treasured beverage in its own right with methods of preservation and casking creating a deliberate variety of flavours.
The types of alcohol added to the wine for the purpose of fortifying it together with the stage in the wine's fermentation at which it is added largely influence the final flavour. Generally speaking the finished result is both stronger with an average alcohol content of around 20% and sweeter than the original wine.
