The grapes which have a thin skin and a clourless juice also have to husbanded carefully before harvesting as if they are allowed to grow in large, dense bunches, they are also prone to several types of rot and fungal infestation. If this wasn't enough pinot noir grapes are also fussy about yeasts and fermentation practices.
To achieve the best pinot noir wines the winemaker must satisfy themselves with a carefully pruned down and therefore low yield harvest before the grapes enter the fermentation and bottling stages. That said when conditions are perfect we are rewarded with wines so full of varied perfume and flavour that it is no wonder they are held in such high regard by wine lovers across the globe.
